"Mango Ice Cake"

When mango is in season then try new version of sweet dishes this time I try ice cake. Turn out good but this recipe needs a lot of patience to set the mixture.Due to high temp in karachi and continous load shedding mine took almost 36 hrs for set completely.
Because my babies refuse to wait more I take it out little earlier which effects the final finishing little

Place your mold on base then put 1.5 inch chocolate cake in base. Pour little milk or sugar syrup on cake base to make it moist.

Blend 2 mango pulp with sugar into fine puree

In bowl take chilled cream and condensed milk and beat until fluffy now add mango puree and beat well.

In 8 tbsp hot water dissolve 4 tbsp gelatin mix and strain it with tea stainer then add in cream mango mixture.

Fold with spatula gently.
Spread this mixture on cake base and keep in freezer until set - 6
Make puree of mango with sugar cook it in low flame. Dissolve 2 tbsp gelatin in 4 tbsp hot water. strain and add in mango puree cook until sugar dissolve. Keep it aside and bring in room temp.

When cream mixture set completely almost after 4 hours pour glaze over it cover with any plate or almunium foil and freeze it for 24hours
Or until set completely. - 8
Demold your ice cream cake decorate with mango flower and any seasonal fruits I use cherries.

Tips and totkas
I don't have ring mold therefore I use old flour seive (atta channay wali channi I remove uski net and cover sides with almunium foil) for base I reuse old cake board (bakery cake ke sath Jo base Atta ha usko re use KIA).
I make chocolate moist cake and use 1 inch round as a base you can use plain vanilla cake or bazaar bought cake too.
I makes it first time therefore I didnt take risk and make layers. But you can try and make 2 to 3layers of cake and cream.
