Ingredients

4-5 servings
  • 4chicken wings 2 chicken drumsticks and 2 thighs
  • 100 mlolive oil
  • 40 gplain flour
  • 40 gwild dried mushrooms
  • 4roasted piquillo peppers sliced
  • 75 grfrozen broad beans
  • 1medium onion chopped
  • 1large carrot sliced

    Coat chicken with flour after seasoning

  2. 2

    Heat oil in a large pan and brown chicken until nearly cooked

  3. 3

    Remove chicken from pan, lower the heat and sweat the onion until translucent. Add the sliced carrot

  4. 4

    Cover wild mushrooms with boiling water and add a chicken stock cube, leave to soak for 20 minutes

  5. 5

    When onion cooked add soaking liquid/stock and simmer a few minutes to cook onion and carrot.

  6. 6

    Return chicken to pan, add mushrooms, frozen broad beans, piquillo peppers and a bit more water if needed. Cover and let simmer until cooked through
