Using an air fryer to cook steak can reduce smoke and keep your stove clean. This method achieves a medium-rare to medium doneness.

This recipe uses frozen-thawed ribeye steak (supermarket thawed is also fine). Let the steak sit at room temperature for one hour (assuming it's cold from the fridge) until its temperature is slightly below room temperature. Use paper towels to pat the steak dry, removing any surface moisture. Sprinkle salt and black pepper on both sides and edges of the steak.

Preheat the air fryer. Place the steak on the fryer rack, set the temperature to 300-320°F, and cook for 16 minutes. Then flip the steak, increase the temperature to 390°F, and cook for another 2 minutes. Flip once more and cook at 390°F for 1 more minute.

Once done, remove the steak and let it rest on a plate or clean cutting board for 5 to 10 minutes.

Some people like to enjoy it as a roast beef salad, in which case you might need to let it rest for an additional 2-3 minutes. If serving with Japanese-style rice, reduce the sea salt (as the sauce is quite flavorful).
