After soaking blend the urad Dal with ginger,half teaspoon salt& chillies until thick,light & fluffy.Add water only as needed so the batter does not come runny..add pinch of baking soda

Soaking the hot fired vadas immediately in water helps they absorb water from inside keeping soft & moist

Whisk the chilled yoghurt well with some salt & sugar..Once the vadas soften squeeze off the excess water & add them to the whisked yoghurt pour some tamarind chutney & green chutney.. sprinkle with cumin powder powder,chaat masala,red chilli powder...garnish with coriander leaves
