Ingredients

  • Stout-Braised Short Ribs:
  • 5 lb.beef short ribs
  • Salt & Pepper
  • 2 Tbsoil
  • 2yellow onions, diced
  • 3carrots, peeled and diced
  • 1celery stalks, diced
  • 1 Tbsminced garlic
  • 1 (16 oz)can of stout
  • 8fresh flat-leaf parsley sprigs (optional)
  • Molasses/ Bourbon BBQ sauce:
  • 1 tablespoonvegetable oil
  • 1small onion, finely chopped
  • 1/2red wine vinegar
  • 2 cupsketchup
  • 1/4 cupmild-flavored (light) molasses
  • 1/4 cupwater
  • 1/2 cupbourbon
  • 1 1/2 teaspoonssalt
  • 1/2 teaspoonground white pepper
  • Leavesfrom 5 fresh thyme sprigs

Steps

    Ribs:

    Brown Short Ribs in on all sides 1 tablespoons of oil

  3. 3

    Sweat onions, celery, carrots with remaining oil in a dutch oven(or equivlant).

  4. 4

    Add garlic and cook until litghtly browned

  5. 5

    Deglaze with stout then add parsley

  6. 6

    Cover and cook in 325 degree oven for 3 hours

  7. 7

    Bbq Sauce:

  8. 8

    Sweat onions and thyme sprigs in veg oil

  9. 9

    Deglaze with water and vinger

  10. 10

    Add ketchup, molassas, and burbon simmer until thick

  11. 11

    Salt and white pepper to taste

  12. 12

    Use stick blender until smooth.

  13. 13

    Remove ribs from oven drain braiseing liquid, coat with bbq sauce and serve.
