Pan fried salmon on an open jacket with dill and butter

Par boil potatoes for about 10-15 mins depending on size. Poke with a cocktail stick to check that they are nearly done. Remove and cool a bit. Preheat oven to 200

Cut the potatoes open in quarters. Put on a baking tray. Melt a knob of butter in the microwave and pour over. Sprinkle dill and season with salt. Pop in the oven and cook until crispy. When nearly done, heat another knob of butter in a pan with a dash of olive oil. When nice and hot, add the salmon skin side down

Don't touch the fish for a good 5-7 mins until skin is crispy. Season with a bit of salt. Then flip the salmon over and cook on the other side for about 5 mins. Don't over cook it. Switch it off. By now potatoes should be more or less done. Plate up the potatoes. Add salmon on top and serve with the pan juices
