Here we go! Today, I’m craving something rich. This dish is delicious served with hot steamed rice, or you can enjoy it as a snack with beer.

Heat a skillet over high heat. Add the pork belly and fry without oil.

After 10 minutes (or when the pork is cooked), pour off the liquid released from the pork.

Reheat the skillet and return the pork belly to the pan. Fry again without oil.

Continue frying until the pork belly releases its fat and becomes crispy and dry. Remove the pork from the skillet. Pour the rendered fat into a container, leaving about 2 tablespoons (30 ml) in the pan for stir-frying.

When the pan is hot, add the chopped garlic and chopped cilantro root (or stems). Stir-fry for 10 seconds.

Add the chopped red chili peppers and stir for another 10 seconds. Add the salt, sugar, and seasoning powder, and mix well.

Return the fried pork belly to the skillet. Stir to combine everything thoroughly.

Turn off the heat. Add the chopped green onions and serve.
