Lemongrass Beef Noodle Salad with Egg Rolls

Slice the beef thinly and marinate with minced shallots, fish sauce, salt, MSG, oyster sauce, sesame oil, and a pinch of pepper. Mix well and let it sit for about 15 minutes to absorb the flavors. Heat a pan and sauté minced lemongrass until fragrant, add chopped onion and stir briefly, then add the beef and stir-fry quickly until just cooked.

Wash the fresh herbs and lettuce. Mix fish sauce with lime juice, sugar, garlic, and chili for a dipping sauce. Julienne the carrot and soak in vinegar and sugar. Fry the egg rolls until golden brown.

Place the fresh herbs and lettuce in a bowl, add the rice noodles, a scoop of beef, some carrot, egg rolls, and a sprinkle of roasted peanuts.
