  2. 1.1 lbsground veal (500 g)
  3. 9 ozground pork (250 g)
  4. 5 ozpancetta (150 g)
  5. 1carrot
  6. 1yellow onion
  7. 1celery stalk
  8. 1/2 cupwhite wine (about 120 ml)
  9. 3 tablespoonstomato paste (40 g)
  10. 1 cupwhole milk (about 250 ml, or a little more if needed)

    Sauté the pancetta in a little olive oil.

  2. 2

    Add the finely chopped celery, carrot, and onion.

  3. 3

    Add the ground pork.

  4. 4

    Add the ground veal.

  5. 5

    Deglaze with the white wine.

  6. 6

    Add the tomato paste, partially cover, and simmer for 1 1/2 hours.

  7. 7

    Add half the milk, cover, and cook for another 1 1/2 hours.

  8. 8

    Add the remaining milk.

  9. 9

    Turn off the heat, cover the pot, and let it rest overnight.
