Ingredients

  • 2 cuphalf boiled rice grain
  • 1 cupusual rice grain
  • 1 cupwhite Urad dal
  • 1/2cup, soaked poha (flat rice)
  • 2 tbspchana dal
  • 1 cupchopped, onion, tomato,curry leaves,green chilli,grated ginger
  • 1/4 tsphing powder
  • 1 tspmethi seeds (fenugreek)
  • Salt as required
  • 1 tspsugar
  • Oil for shallower frying

Steps

    Mix 2 kind of rice, urad dal and fenugreek seeds in a pot. Take poha in another bowl. Wash both, many times to get a clean water. Soak rice mixture for 3 hours. Wash poha thoroughly and soak for 15 minutes and then mix with Rice.

    Grind to get batter, and keep covered in a dark place to ferment naturally. Then add hing, salt and 1 tsp sugar to enhance the taste and colour.

  3. 3

    In a kadhai heat 1 tsp oil. Add 2 laddles of batter. No need to make thin circle. Add the veggies mixture. And 1 tsp oil on the Utthapam.

    Cover and cook both the sides on low to medium flame.

    Serve soft and spongy Utthapam, with mouthwatering tomato mix chutney and enjoy your breakfast.
