This salad is perfect for sandwich filling. I didn’t like the egg salad sandwich for a long time until I made this egg salad. This 'Edamame & Egg Salad' tastes like my Tartar Sauce, and the crunchy Edamame (young soy beans) are so good. If you can’t find Edamame where you live, Peas can be a substitute.

2 servings
  1. 2 tablespoonsEdamame Beans
  2. 2Boiled Eggs *finely or coarsely chopped up
  3. 1 tablespoonfinely chopped Onion
  4. 1 tablespoonfinely chopped Parsley
  5. 1-2 tablespoonsJapanese Mayonnaise
  6. 1 tablespoonfinely chopped Pickled Cucumber
  7. Salt & Pepper

Steps

  1. 1

    Thaw Edamame Beans if frozen. Place in a mixing bowl and season with 1 pinch Salt.

  2. 2

    Add all other ingredients and mix to combine. Season with Salt & Pepper to taste.

Thank you for trying the recipe. You add dried Cranberries? That's interesting. Cranberries can add sourness. I must try it next time.
