Take flour, salt and sugar in a mixer jar and pulse.

Add in chilled butter into it and pulse again until a crumbly mixture is obtained.

Now add in the ice cold water little by little and keep pulsing in the jar until pea sized crumbles form... when you take the dough in your fingers it should be formed and stick together.

Take this mixture on a clean countertop and bring it together. You should not knead it. Divide it into two portions.

Flatten them shaping as discs. Wrap in plastic wrap and refrigerate for at least half an hour

Dice the apples in chunks not more than an inch. Add lemon juuce and sugar. Coat them well. Set aside.

Heat butter in a sauce pan.Add in the apples..cook for 3-4 mins as they start releasing the juices.

Add in the cinnamon, nutmeg, vanilla and lemon zest. Cook well covered for 2 mins

Now in a bowl mix cornstarch and water. Add it to the apples. Let it cook covered for 6-7 mins. Or until it thickenes.turn the flame off and let it cool.

Meanwhile take the pie dough out of the refrigerator. Grease the muffin tin with butter lightly. Roll the pie dough in 1/8 th of an inch thickness. Cut out e circles forbottom of th pie as per your tin size.take the cut outs of leftover dough into long strips for the top.

Place them all in tin, add the cooled filling.

Using dough strips make the old fashioned lettuce design or any design on the top of your pies.

Bake them for 15- 20 mins or until they get golden brown.Serve with whipped cream, dollop of ice cream or as such. ENJOY !!!
