I'm deep in experimentation with fermentation because of the health benefits of fermented foods through probiotics. This fermented drink was a sure jackpot - it's delicious; and has good ingredients too.

I'm deep in experimentation with fermentation because of the health benefits of fermented foods through probiotics. This fermented drink was a sure jackpot - it's delicious; and has good ingredients too.

Cut the beetroot and ginger into pieces. No need to peel the ginger, just wash thoroughly.

Boil for 10 minutes in about one and a half litres of water.

Leave to ferment for three days in a sealed container.

Strain.

Add sugar.

Enjoy.

Blend the remaining solids and use to cook. They're perfect flavour enhancers.
