Quick paella for one (Perfect Cooker Recipe)

When I'm in a hurry cooking just for me, the Perfect Cooker is a brilliant device. Just throw a bunch of ingredients in the cooking pot, press cook and dinner is ready in 20 minutes or so. I regularly cook something loosely based on paella in this with either pork, chicken or ham and whatever vegetables I have in the fridge. I try to always have a bag of prawns in the freezer, as these add a more authentic paella flavour to the dish.

Ingredients

about 20 minutes
1 person - the size that fits in my Perfect Cooker
  • 1/4 cuprice (I generally use basmati rice)
  • 1/2 tsppaprika
  • 1/4 tspchili powder
  • a fewdrops of fish sauce (or oyster sauce)
  • 3/4 cupliquid - water, stock or whey
  • 1/2pepper - sliced
  • 1/2carrot sliced
  • 1/2medium onion sliced (or a few spring onions)
  • 2medium mushrooms, in thick slices
  • 3-4 slicesham (or other meat)
  • a fewprawns (optional)
  • handfulspinach leaves or similar (optional)

Steps

about 20 minutes

    Put the rice in the Perfect Cooker pot, the spices and add the liquid. This can be any flavour of stock (chicken works well) or other cooking liquid. I made cheese at the weekend, so have quite a lot of whey left over, so I used whey in the recipe tonight instead of my usual chicken stock. The whey adds a much sweeter flavour, almost sweet and sour style.

    Add sliced vegetables - peppers, carrots, onions and mushrooms work well. Mushrooms need to be in much chunkier slices than the other veg.

    Add the meat (I used a few slices of ham cut into strips).

  4. 4

    That's it - press "cook" on the Perfect Cooker.

  5. 5

    You can leave it to complete cooking undisturbed, but I generally give it a stir after about 10 minutes to stop rice sticking to the bottom.

    Throw the frozen prawns on top towards the end, so that they just warm through.

  7. 7

    Spoon on to a plate/bowl top serve, and add the spinach leaves on top
