Ingredients

  • 1 cuptoor dal
  • Veggies:
  • 1.5 cupsonions and/or shallots* (large chop)
  • Halfcup okra
  • 2drumsticks* (cut to 1 to 2 inch pieces)
  • 2-3green chili*
  • 1.5 cuptomatoes*
  • 1 cuppotatoes*
  • 1 cupcarrots*
  • 1 cupbrinjal
  • other veggies
  • Tempered Ingredients:
  • 1-1.5 teaspoonmustard seeds
  • 1-1.5 teaspooncumin
  • 2-3dried red chili
  • 4-6garlic cloves
  • 1-1.5 teaspoonfenugreek seeds
  • Spices:
  • 2-3 teaspoonsambar powder
  • Halfteaspoon turmeric
  • 2 teaspoonred chili powder
  • Quarter teaspoon asafoetida
  • Other:
  • 2-3 cupstamarind broth
  • 3 sprigscurry leaves
  • Halfcup cilantro
  • Jaggery/sugar (to taste)

Steps

  1. 1

    Wash and strain the dal at least 3 times then soak dal in water for 1 hour

  2. 2

    Pressure cook dal with 2 cups water (12 mins or 3 whistles)

  3. 3

    Heat oil and add mustard seeds, fenugreek, cumin, garlic, dried red chili, garlic and saute till fragrant

  4. 4

    Add all the veggies and mix well for about 5 mins. Add salt.

  5. 5

    Add 0.5x turmeric, 2x red chili, 2x sambar powder, 0.25 asafoetida

  6. 6

    Add enough tamarind broth to barely cover the veggies and some water

  7. 7

    Add jaggery/sugar

  8. 8

    Bring the broth to a boil

  9. 9

    Add curry leaves

  10. 10

    Add pressure cooked dal

  11. 11

    Add salt to taste

  12. 12

    Bring to boil and add cilantro
