Baked Zucchini Rounds with Cheese
Perfect as a side for steak or as an appetizer.

Wash and dry the zucchini. Slice it into thin rounds about 1/2 inch thick. Arrange the slices on a baking sheet lined with parchment paper. Sprinkle with salt.

Mix the cottage cheese with the Parmesan and Swiss cheese. Add salt if needed. Spread the cheese mixture over the zucchini slices and bake at 350°F (180°C) for about 30-40 minutes, until golden brown.
