Place the couscous in a large bowl, wash it with water, and let it dry. Put it in a steamer to steam. After steaming, sprinkle it with water and salt, let it dry, and steam it again. After the second steaming, coat it with a little clarified butter. The couscous is now ready to be served.

For the broth: In a pot, place the meat, olive oil, chopped onions, salt, pepper, and all the spices. Let it sauté, then add the tomatoes while stirring. Add enough water, the chickpeas, and let it cook for half an hour. Then add the carrots, turnips, the bundle of cilantro and parsley, pumpkin, and zucchini. Add enough water to cover everything and let it cook until done. Remove the pot from the heat.

Place the couscous in a large bowl, pour the broth over it, then place the meat in the center and the vegetables around the sides. Serve hot.
