This is a super delicious snack that was staple in all Kerala bones but it is losing it's popularity very fast because of fancy frayams, chips etc.
Pappada/papadams are delicious and irresistible in themselves but this Keralean recipe makes them more delicious and takes them to the next level.
Generally when we fry papads, it increases in size but in this recipe papad stays about the same size. I used rice flour for batter but you can also use rice, soaked and then grinded in smooth paste.

Ingredients

20 minutes
2 persons
  • 20-30small rice papads
  • 1/2 cuprice flour
  • 1/2 tspcumin seeds
  • 1/2 tspwhite sesame seeds
  • 1/2 tspblack sesame seeds
  • 1 tspred chilli powder
  • 1/2 tspturmeric powder
  • Pinchasafoetida
  • to tasteSalt
  • as requiredOil for frying

Steps

20 minutes
  1. 1

    Add all the ingredients in rice flour and prepare the batter by adding water. Keep the batter little thin unlike regular pakoda batter.

    Heat oil and dip papad in prepared batter and deep fry it on medium flame.

    Fry it from both sides till it becomes golden and crisp.

    Remove it on a tissue lined plate.

  5. 5

    Once it cools down completely,store it in a air tight container.

  6. 6

    Relish it with tea or any dip.
