Cut chicken into bite sized pieces 1/2 inch to 1 inch

Stir together all marinade ingredients except chicken in a bowl. Add chicken chunks and mix until well coated. Cover and refrigerate at least 1 hour.

Heat a large pan over high heat until very hot. Add chicken. Cook until chicken is cooked through. Drain water from pan as needed.

Reduce to medium heat. Add all sauce ingredients, stirring until well mixed. Bring to a simmer.

Simmer for 15-20 minutes, stirring occasionally. Sauce should be slightly thickened and orange.

Turn off heat. Serve over rice. Garnish with chopped cilantro and fresh lemon juice.
