Ingredients

2 servings
  • 1 packageBrussels sprouts
  • 1leek
  • 1 clovegarlic
  • 1 cuppasta (any short dry pasta you like) (about 100 grams)
  • 1/2lemon (juice and zest)
  • 2 cupshot water (about 480 ml)
  • Salt and pepper, to taste
  • as neededOlive oil and butter,
  • as neededGrated Parmesan cheese,

Steps

    Wash and cut half of the Brussels sprouts in half. Finely chop the other half. Slice the leek and mince the garlic.

    Heat olive oil and a piece of butter in a pot. Sauté the halved Brussels sprouts until they start to brown, then add the leek and garlic. Season with salt and continue cooking.

    Add the pasta and cook for a couple of minutes without adding any liquid yet.

    Pour in 2 cups of hot water. Adjust salt and add pepper. Cook with the lid partially on until about 3 minutes before the pasta is done (cooking time will depend on the pasta you use).

    Add the chopped Brussels sprouts and continue cooking. Then add the juice and zest of half a lemon and a handful of grated Parmesan cheese. When the pasta is ready, turn off the heat and stir in a tablespoon of butter for a creamier texture.
