Ukadiche Modak

Modak are steamed dumplings with an outer rice flour dough and a coconut-jaggery stuffing. These sweet dumplings are also known as Ukadiche Modak in Marathi language.The word ukadiche means ‘that which is steamed’ or ‘steamed’. The word ‘ukad’ also means steamed rice flour dough. So in simple English “Ukadiche Modak” means steamed Modak. Here I have used sugar.

Steps

Add 1 tb sp pure ghee in a wok. Fry almonds and remove in a plate. Then fry cashew and remove in a plate. Fry magaj and pistachio and remove in a plate.

Now grind it coarsely in a mixer with sugar.

In the same wok add 1/2 tsp ghee add poppy seeds and fry. Add desiccated coconut and roast till Aroma starts.

Now add grinded dry fruits and sugar and mix and cook for another 2 minutes. Mix well and remove the stuffing in a plate.

Add water in wok add pure ghee, pinch of salt and let it boil.

Now add rice flour slowly and keep stirring while mixing. Switch off the flame and place lid over it and keep aside for 5 minutes.

Now knead the dough. If dough is dry add 2-3 tb sp water and knead like a puri dough.

Take a portion of dough and make a ball. Make a disc of this ball by your fingers as shown in pic below.

Make falls in this disc as shown below and put a spoon full of mixture in it and bring its edges to centre and seal it. Modak is ready.

Like wise make all the Modak. Place them in a greased thali.

Heat water in a big pan. Place a stand in it. Place the Thali on it and cover it and steam for 15 minutes. After 15 minutes remove the lid and steam for another 5 minutes.

It can be served hot, cold or at room temperature. Modaks are favourite of Lord Ganesha.
