Prepare your ingredients

In a large bowl, mix gram flour, onions, ginger, garlic, coriander, capsicum, green chili. Add water as you stir until the batter is of medium thickness.

On medium heat, heat some oil in a frying pan until hot enough.
When ready to fry, add the baking powder and mix well. Coat the eggs with the batter one slice at a time and deep fry them until golden brown.

Remove from the heat and place the bajias on a plate lined with kitchen towel.

Serve warm with tamarind sauce or any sauce of your choice.
