I am inspired by my mother in law... I made this for myself as I like pickles... And bitter gourd is one of my favourite veggie.

I am inspired by my mother in law... I made this for myself as I like pickles... And bitter gourd is one of my favourite veggie.
Steps

Wash the bitter gourds and cut them into small slices...

Marinate the slices with salt and leave them overnight.

Next morning strain the slices to remove water...

Now keep them in sun for 3 to 4 hours and let them completely dry..

Roast fennel seeds, fenugreek seeds and mustard seeds and semi grind them.

Take a big bowl.. Put bitter gourds, add all the spices, oil and vinegar...

Mix them well.. (And make sure not to use wet utensils or hands.)

Pour it into a jar.. Pickle will be ready to consume in 7 days.
