Raw Papaya Syrup

The story behind this is interesting. So some papayas had been harvested being still immature and it was said that they would never ripen. I told my mum, hey, they do raw papaya salads in Thailand, so it must be palatable still. Why don't we try cooking them as vegetables and see how they turn out? Surprisingly, they were absolutely delicious as vegetables! I grated them up and added them to the stew I was making. So when I'm leaving shags back to Nairobi I take two of those rejected papayas with the aim of experimenting with them some more. I'm really fond of the process of preservation of food in many forms, my favourites being fermentation and sugar preservation. I've not successfully created a viable jam or marmalade but that won't deter me o! I'll keep trying! So I decide to go jam with the raw papaya. It still didn't give me a jam but it did better - a super delicious syrup that I can't wait to try on all types of desserts!

Ingredients

2 1/2 hrs

  • 5 cupsgrated raw papaya
  • 2 cupssugar
  • 2 tablespoonscinnamon powder
  • 1 tablespoondried mint
  • 1 tablespooncitric acid
  • Water

Steps

2 1/2 hrs
  1. 1

    Blend the papaya in enough water to liquefy it.

  2. 2

    Put all the ingredients in a pot, boil and simmer until it is a very thick liquid.

  3. 3

    Put in jars while hot and let cool, then refrigerate. Recipes with this syrup coming soon. I did mandazis with it (on my profile) and they are ADDICTIVE!
