Veg Kolhapuri is a traditional Marathi dish where mixed vegetables are cooked in a spicy, coconut-based gravy.

First, set aside the masala ingredients and vegetables.

Dry roast all the whole spices in a skillet, then grind them in a blender to make a dry powder.

Boil all the chopped vegetables in salted water for 7-8 minutes, then set aside.

Heat oil in a skillet, add fennel seeds, then add the chopped onions.

After a few minutes, add the ginger-garlic paste and tomatoes. Sauté until the tomatoes are soft, then add the boiled vegetables, ground masala, and salt. Mix well.

Add milk and a little water, then cook until the gravy thickens.

Serve hot, garnished, with roti, paratha, or naan.
