Ingredients

  • For Kolhapuri Masala:
  • 2 tablespoonsgrated coconut
  • 1 tablespooncoriander seeds
  • 4whole dried red chilies
  • 1 tablespoonpoppy seeds
  • 1/2 inchcinnamon stick
  • 2cloves
  • 4whole black peppercorns
  • Seeds from 1/2 black cardamom pod
  • 1 cupbell pepper, cut into long strips
  • 1 cuppotatoes, cut into pieces
  • 1/2 cupcarrots, cut into long strips
  • 1 cuponion, finely chopped
  • 1/2 cuptomato, finely chopped
  • 1 tablespoonginger-garlic paste
  • 1/4 cupgreen peas
  • 1/2 teaspoonturmeric powder
  • Salt to taste
  • 1/4 teaspoonfennel seeds
  • 1/3 cupmilk (about 80 ml)

Steps

  1. 1

    First, set aside the masala ingredients and vegetables.

    Dry roast all the whole spices in a skillet, then grind them in a blender to make a dry powder.

    Boil all the chopped vegetables in salted water for 7-8 minutes, then set aside.

    Heat oil in a skillet, add fennel seeds, then add the chopped onions.

    After a few minutes, add the ginger-garlic paste and tomatoes. Sauté until the tomatoes are soft, then add the boiled vegetables, ground masala, and salt. Mix well.

    Add milk and a little water, then cook until the gravy thickens.

    Serve hot, garnished, with roti, paratha, or naan.
