I got this recipe from a Pampered Chef party. I had to tweak it a little because they used the pampered chef dill blend, and I don't have or use those spice blends. I also like a little more salt and thought it could use some pepper. My family enjoyed this, and I hope yours will too.

Ingredients

  1. 1 lbchicken tenderloins or chicken breast
  2. 1 cupfrozen broccoli florets (or more)
  3. 8 ozcream cheese
  4. 1small red bell pepper chopped fine
  5. 1/2 cupvegetable or chicken stock
  6. 1 tbspdill
  7. 1 tbspMrs Dash
  8. 2 clovesgarlic
  9. 1/2-1 tspsalt (to taste)
  10. to taste Black Pepper
  11. 1/2 cupGreek yogurt (a single serving cup works perfectly)
  12. 1 cupshredded cheddar cheese

Cooking Instructions

    Add chicken, stock, cream cheese, broccoli, bell pepper, garlic, dill, Mrs Dash, and salt to the instant pot/pressure cooker.

    Set instant pot to high pressure for 6 minutes.

  3. 3

    Once pressure cooker has finished, quick release method to depressurize.

  4. 4

    Shred up chicken and stir to combine. Stir in Greek yogurt and cheddar cheese and allow to meld.

    Serve with chips, veggies, or crackers.
