Latkes, Crispy Potato Fritters. Jon Style

“From My Memory Chest”
Latkes are like a crispy, fried potato pancake. This is a very traditional dish for the Jewish holiday Hanukkah. It’s one of my favorite ways to make potatoes. They’re typically served with applesauce.

Steps
- 1
Prepare and cut all the ingredients.
Grate the potatoes and place them in cold water to prevent browning.
Remove the potatoes from the water and squeeze them dry with a towel. Place in a large bowl.
Add the beaten eggs, flour, green onions, onion, and salt. Mix well. - 2
Heat a wide skillet with enough oil to cover the bottom (about 1/4 inch deep).
Fill a large serving spoon with the potato mixture and gently push it onto the hot oil with a smaller spoon. Let the bottom brown, then flip to brown the other side. - 3
You’ll love these crispy potatoes.
Serve with applesauce if you like.
