Start by preparing the gyros the night before. After washing the pork belly slices, let them drain. Then, use kitchen scissors to cut them into strips and marinate them with the marinade ingredients. Cover with plastic wrap and refrigerate overnight.

When ready to cook, place the marinated pork strips in a nonstick skillet without any oil. Cook for about 10 to 15 minutes.

Next, fry the potatoes and warm the pita bread with a little olive oil in a panini press or skillet.

Once the pitas and fries are ready, assemble your plate. Add tomato and onion, and it's ready to serve (everyone can add whatever toppings they like).
