A summer twist on chicken, with diced avocado and everything brought together with homemade pesto (without garlic). Absolutely delicious!

Dice the chicken and avocado. Roughly chop the onion. In a skillet, sauté the onion with 2 tablespoons of olive oil.

When the onion turns golden, add the chicken and cook over medium heat for about 10 minutes.

Add the avocado and cook for a few more minutes. Before finishing, stir in a few tablespoons of pesto. Season with salt, add a pinch of tarragon, and serve.
