Ekuru elewe (leaf ekuru)

Ekuru is a delicious meal enjoyed by the yoruba's, it's made from beans.some people refer to it as white moimoi, as it's cooked with not much ingredient just salt which is also optional. It's enjoyed with a special sauce. For this recipe I had beans paste in the freezer. But you can also wash your beans just like you want to make moi moi but don't add anything to it while grinding. Cooking Instructions

I brought out the bean paste from the fridge allowed it to come to room temperature as it was initially frozen I poured into a stand mixer and mixed for about 10 minutes you can use a whisk but would take longer add salt to it and mix together.

Wash the leafs and fold it into a triangular shape more like a cone fold the bottom side then pour the paste into it.

Fold the top too to cover it up. Repeat the process until you exhaust all the paste. gently arrange it into a colander place the colander into a pot with water cover it up and allow to cook for about 30-45minutes.

Enjoy with ekuru sauce. Serve hot
