Goja is a traditional sweet from Bengal and loved by all. It is a deep fried crispy sweet which is soft inside and tastes delicious. It is made by assembling a kneaded flour dough and piled into layers 3 to 4 times so that layers are formed and dipped into a sugar syrup. It can be preserved for 4 to 5 days and can be made in batches during any festival and refrigerated.

Sift flour. Add baking soda and ghee. Mix all to get a crumbly texture. Add water slowly while kneading it into a tight dough. Cover and let it rest for 10 minutes.

Roll out into a big circular disc. With a sharp knife divide the disc into four equal parts. Place one on top of each. Flatten with the palms of your hand. Repeat the process thrice. Then cut into square pieces. Heat oil and fry gojas in low flame till crispy brown.

Make a sugar syrup of 1 string consistency by boiling sugar with 1/2 cup water and crushed cardamom. Add 1 tsp lemon juice so that sugar does not crystalize. Allow the syrup to cool down but still medium warm. Dip the gojas in it for 10 minutes. Shake off extra syrup and spread on a plate. Cool and store in an airtight container and refrigerate. Serve gojas as a delicious dessert or with a cup of tea.
