A neighbor gave me a fresh young opo squash, so I made two dishes for the family to enjoy with this sweet, tender squash.
Opo Squash Soup and Opo Squash Stir-Fried with Eggs
A neighbor gave me a fresh young opo squash, so I made two dishes for the family to enjoy with this sweet, tender squash.

Peel and cut the opo squash into thin strips. Peel and devein the shrimp, then cut each shrimp in half and divide into two portions. In a pan, sauté plenty of garlic until fragrant, then add the opo squash and stir-fry. Season to taste, then add one portion of the shrimp.

Once the squash is tender, beat the 2 eggs and pour them into the pan with the squash. Turn off the heat and sprinkle with green onions and black pepper.

Marinate the remaining shrimp with a little fish sauce. Sauté the shrimp with the white part of the green onions until fragrant, then add 1 large bowl of water (about 2 cups/480 ml) and bring to a boil. When the water boils, add the opo squash, season to taste, turn off the heat, and top with green onions, cilantro, and black pepper.
