Chicken Milanesa (Escalopa) with Goat Cheese, Jon Style

In Chile, this dish is called escalopas, but in other American countries, it's better known as milanesa. Escalopas or milanesas can be made with beef, chicken, or pork. They are thin cuts of meat, pounded with a meat mallet, and breaded. I don't recommend making them too thin, so they don't dry out. Besides seasoning the meat, I like to add fresh herbs to the breadcrumbs, such as oregano, thyme, parsley, or cilantro.

  • 2.2 lbs (1 kg)chicken breast
  • Seasoning for chicken
  • 3 clovesgarlic, minced
  • 1 tablespoonchopped parsley
  • 1 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • Ingredients for breading
  • 1 1/2 cupsbreadcrumbs (about 150 grams)
  • 2 tablespoonschopped parsley
  • 2 tablespoonsfresh oregano
  • 1/4 cupgrated Parmesan cheese (about 25 grams)
  • 1/2 cupall-purpose flour (about 60 grams)
  • 3eggs, beaten
  • Oil for frying

Steps

    METHOD
    Measure and prepare all the ingredients needed for the recipe.
    Pat the chicken breasts dry with paper towels.
    Slice the chicken breasts into thin, wide pieces.
    Place the pieces between plastic wrap and pound them with a meat mallet until they are even in thickness and tender. Arrange them on a tray as you go.

    Season the chicken slices with garlic, salt, pepper, and chopped parsley.
    In a bowl, mix the breadcrumbs, parsley, oregano, and Parmesan cheese.

    Dredge the chicken slices in flour, then dip in the beaten eggs, and coat with the breadcrumb mixture.
    Heat a skillet with enough oil for frying. Fry the chicken over medium heat until golden brown.

    OPEN-FACED CHICKEN MILANESA SANDWICH WITH GOAT CHEESE
    1 fried chicken milanesa
    1 slice toasted rye bread
    1 tomato, sliced
    1 slice goat cheese
    1 tablespoon mayonnaise
    1/2 teaspoon mustard
    Lettuce salad with cucumber and avocado

    Warm the chicken milanesa with the goat cheese on top in a small pan.
    Mix the mayonnaise and mustard, and spread on the toasted rye bread.
    Place tomato slices on top of the bread.
    Add the chicken milanesa with goat cheese on top.
    Cut the open-faced sandwich in half and serve with the salad.
