Name says it all ... the most famous Bombay sandwich.. try this recipe and you won't regret it.

In a pan heat oil on a low flame, add mustard seeds followed with chopped onion. Cook them until they are translucent.

Add mashed potato, salt, turmeric powder, red chilli powder, coriander powder, dry mango powder and garam masala. Mix everything well. Let it cook for 2-3 minutes

Add coriander leaves and put the flame off. Give a good mix. Let it cool for 5 mins.

Green chutney : In a mixer jar add all the ingredients given in chutney section and grind them. Adjust salt and green chilli as per your taste.

Take a break slice, apply 1/2 tsp green chutney, then spread the potato mix on it, keep 2-3 tomato slices and cucumber slices on it.

Take another bread slice, apply green chutney on it and keep it on the above set.

Heat a griddle or grill pan or sandwich maker. Apply 1/2 tsp of butter on it, keep the sandwich on it. Grill the sandwich from both sides untill it's golden brown.

Remove it from the griddle/ grill pan. Cut the sandwich into two halves.

Serve hot with green chutney and or tomato ketchup.

Repeat the process with the remaining ingredients.
