Firstly, sieve the gram flour further in a bowl add in the rice flour pop in the dry ingredients pinch of baking powder this will help to keep the crisp for a longer time

Roughly mix the salt, red chilli powder, garlic powder & half crushed fennel seeds while all dry ingredients are mixed.

Add a teaspoon of ginger garlic paste now pop in the cashew nuts & toss it for first coating.

Besides this preparation, heat oil in a Kadhai for deep frying pakoras.

Now add a tablespoon of hot oil in batter coat with a spoon flipping the cashew nuts in the batter next add a tablespoon of hot oil coat well.

Now splash some water just to get the thick texture it will also help to coat perfectly.

Finally using a spoon drop each nut coated in batter fry on medium flame until golden colour & pop it on a paper towel or tissue paper to remove excess oil.

Remove it in a serving bowl and just add few fried curry leaves & enjoy it with tomato ketchup or else it looks delicious as it is.
