Nothing beats frying fried rice in a wok and overnight rice works best!

Personally, I don’t really like peas from the frozen vegetables which is quite typical of a Chinese takeaway. Chopped long beans is preferred.

Ingredients

  • Overnight cooked rice
  • 2-3eggs
  • Chopped spring onions
  • Prawns
  • Carrots (julienned, optional)
  • Shimeiji mushrooms (optional)
  • Chopped long beans (optional)
  • 1 tspSalt
  • Oil
  • Pickled green chilli (Sides)

Steps

  1. 1

    Cook the rice and keep it in the fridge overnight to dry.

  2. 2

    Add oil to wok and cook pre-cook prawns. Set aside.

  3. 3

    Add more oil in the same wok and fry the unbeaten egg whites first before frying the yolks.

  4. 4

    Add overnight rice, prawns, carrots, mushrooms and salt. Fry till slightly dry and aromatic. Tossing it every now and then. Turn up fire and quickly turn off to give it the wok hei taste. Add spring onions and give it a toss! Best served with pickled green chilli.
