Ingredients

  • 200 gramscauliflower
  • 2large potatoes
  • 1 cupgreen peas
  • 2 teaspoonsoil
  • 1 teaspoonasafoetida
  • 1/2 teaspooncumin seeds
  • 2-3green chilies (finely chopped)
  • 1 tablespoondried fenugreek leaves
  • 1 teaspoonginger garlic paste
  • 1/2 teaspoonturmeric powder
  • 1 teaspooncoriander powder
  • 1 teaspoonred chili powder
  • Salt to taste
  • 1/2 teaspoongaram masala
  • 1 tablespooncilantro (finely chopped)

Steps

    First, cut the potatoes and cauliflower into small pieces. Shell the peas and set aside.

    Place a pan on the stove, add oil, and fry the cauliflower and potato pieces. Remove them to a plate.

    Add oil to a pan and heat it. Add asafoetida and cumin seeds, then add onions. When the onions turn light brown, add ginger paste, green chilies, and 2 small chopped tomatoes. Sauté the spices on low heat until the tomatoes are mashed.

    Mix in turmeric powder, coriander powder, garam masala, dried mango powder, red chili powder, salt, dried fenugreek leaves, and half of the cilantro. Add 2 cups of water and bring to a boil. The masala for the cauliflower and potatoes is ready. Add the fried cauliflower, potatoes, and peas to this masala, cover, and cook for 5 minutes.
