Sweet Potato with Orange

This recipe is one of my mom’s favorites—when she makes it, she could eat the whole dish herself. She adapted her traditional recipe to make it in the microwave, so it’s ready in just half an hour. Now I make it for her to treat her. It’s also good for high blood pressure, thanks to the potassium in the sweet potatoes and the magnesium in the oranges.
Sweet Potato with Orange

Prepare the ingredients. Peel the sweet potatoes and slice them into 1/4-inch (about 0.5 cm) rounds. Squeeze the oranges and set aside 2 cups (480 ml) of juice.

Arrange the sweet potato slices in a microwave-safe dish. Sprinkle the sugar and cinnamon over the top, then pour 1 cup (240 ml) of orange juice over them.

Microwave on high for 10 minutes. Add the remaining cup (240 ml) of orange juice and microwave for another 10 minutes. Stir so all the slices are coated in the syrup that has formed, and let rest for 10 minutes before serving. Enjoy warm or cold.
