A microwave pumpkin flan, a delicious and simple dessert you can make quickly and that turns out great.

Cut the pumpkin into pieces and place them in a microwave-safe bowl. Cover with plastic wrap and microwave for about 10 minutes at 800W. Let cool.

In another bowl, add all the ingredients except the pumpkin and beat well. Once mixed, add the 2 2/3 cups (400 grams) of cooked pumpkin and mix thoroughly.

Pour caramel sauce into the bottom of a microwave-safe mold to cover the base. Add the pumpkin mixture on top.

Microwave at 600W for 10 minutes. Let it rest in the microwave for 3 minutes, then microwave for another 9 minutes. Let it rest for a couple more minutes. Insert a toothpick in the center to check if it’s done; if it comes out clean, it’s ready. If not, microwave for 1 more minute at a time until set. Cooking time may vary depending on your microwave.

Let the flan cool in the refrigerator. When ready to serve, invert it onto a plate.

Top with more caramel sauce if you like, and it’s ready to enjoy! A delicious pumpkin flan.
