Mix all the sauce ingredients together

Pour half the sauce mix over the chicken and marinate for at least 10 mins. Keep the rest for later

Char-grill the chicken thighs for about 4 mins each side, or until cooked through.

Rest chicken for 2 mins then slice into small pieces.

Cook the noodles in boiling water according to packet instructions, drain and then coat with a little oil to prevent them from sticking together.

In a wok (or hot pan), stir-fry the bok choy and snow peas.

Turn off heat and add bean sprouts. Take a large bowl and mix chicken, noodles and vegetables together with the remaining sauce.
