Ingredients

  • 1/3 cupcooking oil
  • 1/3 cupflour
  • 1onion, chopped
  • 2 clovegarlic, minced
  • 1red pepper, chopped
  • 1green pepper, chopped
  • 1 cupcelery, chopped
  • 1/2 cupokra, sliced
  • 2 1/2 cupchicken stock
  • 2 tspCajun seasoning
  • 1/2 tspTabasco sauce or Louisiana hot sauce
  • 2andouille sausage links
  • 1/2 lbraw, deveined shrimp
  • salt
  • black pepper

Steps

  1. 1

    Create a roux with flour and cooking oil. Stir and cook on medium until roux turns a dark reddish brown

  2. 2

    Add onions, peppers, celery, garlic, and okra. Cook for 8-10 minutes until vegetables tender.

  3. 3

    Add chicken stock, Cajun seasoning, and Tabasco sauce. Bring to a boil, then stir in sausage. Add salt and pepper to taste

  4. 4

    Simmer for 15 minutes, then add shrimp and cook a few minutes until done.

  5. 5

    Serve over rice

The amount of hot sauce in this recipe is conservative... add more if you prefer more heat. I'm weaksauce and don't like to cry while I eat 😆
