Heaven on Earth - lava trolls and diamonds

Vík í Mýrdal is situated on the southernmost coast of Iceland under the Mýrdalsjökull glacier which is situated on top of Katla volcano. Vík's beach is counted as one of the 10 most beautiful on Earth.

For me, it's truly magical and my favourite place; the black sandy beach stretches from under the puffin laden cliffs to the west to the stacks of basalt rock to the east, remnants of a once more extensive cliff line battered by Atlantic rollers. According to folklore, the rock formations are former trolls who tried to drag their boats out to sea only to be caught by the rising dawn. Nearby, blocks of ice wash up from Jökulsárlón glacier lagoon and glisten like diamonds on the black shoreline.

This is my food version of this scene; volcanic lava rocks made from black meringues and diamonds made from light and airy Icelandic skyr infused with kala mansi (a cross between a kumquat and a mandarin orange which originates from Sulawesi) and topped with cape gooseberries from Peru and a pinch of Icelandic lava salt.

Ingredients

12 hours!!

  • Volcanic Lava Rocks:
  • 3egg whites
  • 260 g (8.8 oz)caster sugar
  • black food colour
  • Diamonds:
  • 500 g (17.5 oz)proper Icelandic skyr either from Iceland or Hesper Farm in Yorkshire
  • 300 ml (1 1/4 cups)double cream
  • 2eggs
  • 175 g (7 oz)caster sugar
  • 5 sheetsgelatin
  • 2vanilla pods
  • 1 tspkala mansi juice plus a little extra for drizzling
  • To finish:
  • Icelandic black lava salt
  • cape goosberries

Steps

12 hours!!
  1. 1

    Volcanic rocks: Preheat the oven to 100 degrees C, 210 degrees F, Gas mark 1.5. Whisk the egg whites until fluffy then add the caster sugar a tablespoon at a time until the meringue has stiff peaks and all the sugar has dissolved — about ten minutes. Add the black colour and whisk briefly just until the colour is full integrated.

    Dollop onto a baking tray and bake for 12 hours!!

    Diamonds: Soften the gelatin in cold water for 3-5 minutes. Remove a couple of spoonfuls of the cream and set aside in a large bowl. Lightly whip the remaining cream.

    Heat the eggs and caster sugar until 140 degrees C, 175 degrees F, Gas mark 1 then set aside to cool. Whip the eggs and caster sugar until pale and increased in volume. Strain the gelatin. Warm the milk that was set aside and add the gelatin stirring until dissolved. Scrape the seeds from the vanilla pods and add to the cream.

    Note: always prepare the gelatin cream last otherwise the cream will start cooling and the gelatin will start to set.

    Gently fold the skyr into the whipped cream and egg/sugar mixture. Stir in the kala mansi. Vigorously whisk in the gelatin-cream-vanilla. Pour into moulds to set.

    Place one of the diamonds on a plate, add a pinch of lava salt, drizzle with a few drops of kala mansi and top with a volcanic rock and a cape gooseberry.
