Ingredients

30 minutes plus chilling
Serves 3 servings
  1. 2 cupsheavy cream (500 g)
  2. 1/2 cupmilk (100 g)
  3. 1/2 cupsugar (100 g)
  4. 2 1/2 teaspoonspowdered gelatin (8 g, bloom 240)
  5. 1/2 teaspoonvanilla extract
  6. 1 2/3 cupsmandarin orange juice (400 g)
  7. 3 tablespoonswater (50 g)
  8. 2 tablespoonspotato starch
  9. 2 tablespoonsgranulated sugar

Cooking Instructions

    Soak the gelatin in cold water for 10-15 minutes.

    Heat the milk and sugar to 160°F (70°C), stirring to dissolve the sugar. Remove from heat.

    Add the soaked and squeezed gelatin. Stir to combine.

    In a separate pot, bring the heavy cream to a boil for 2-3 minutes. Let cool for 5 minutes, then add to the milk mixture. Mix well.

    Tilt a glass and pour in a little of the panna cotta mixture. Refrigerate without moving or lifting the glass.

    In a saucepan, combine the mandarin orange juice, water, potato starch, and granulated sugar. Stir well to combine all ingredients and cook over low heat. Bring to a boil and cook for 5-6 minutes, stirring constantly.

    Let cool for about 12-15 minutes, then fill the rest of the glass.

    Let cool and decorate with mandarin zest, fruit slices, and green leaves.
