During Navratri this Baigan Fry in Bihari style would be one of my best side dish. I love Baigan so much
Steps

Wash the Baigan and cut circular thick slices.

In a blender blend cumin seeds, coriander seeds, garlic cloves, coriander leaves, green chillies well.
- 3
Add turmeric powder, red chilli powder, amchur powder, salt to the paste. Smear the paste to the Baigan slices and set aside for 10 mins.

In a pan heat oil and fry the Baigan slices until golden in colour.
- 5
Garnish with coriander leaves and enjoy with steamed rice or Roti or Paratha
