Wash and dice the vegetables.

Heat a little oil in a skillet. Add the onion and peppers, and sauté until softened.

Cut the pressed pork cracklings into small cubes. Add them to the onion and peppers, stir, then add the diced tomatoes. Cover the skillet and cook until the tomatoes release their juices. Serve hot!
