Boil the soaked Chickpeas for 5-6 whistles.

Rinse the Quinoa in mesh. Now add the rinsed quinoa and the water in a saucepan. Bring the mixture to a boil, then decrease the heat to low. Cook till quinoa has absorbed all of the water.Switch off the flame and let the quinoa rest for 5 minutes.

Chop all the Vegetables- I have used Onion, Bell Peppers, Tomato, Carrot and Cucumber.

In large pan, add all the chopped Vegetables and chickpeas. Mix well.

In another bowl, combine olive oil, lemon juice, vinegar, chopped garlic, herbs and salt. Mix well.

Once the Quinoa is cooled, add it the bowl and then add the dressing. Add salt and pepper and mix well.

Leave in fridge for 10-15 mins. Serve chilled.
