Rinse the lentils thoroughly and soak for 15 minutes. In a pressure cooker, add the soaked lentils, salt, turmeric, and 2 cups water (about 480 ml). Cook on low heat for 1 whistle. The lentils should be cooked but not mushy.

Heat a pan on the stove. Add ghee. Add cumin seeds and asafoetida. Add ginger-green chili paste and garlic. Sauté for 1 minute, then add onions. Cook until the onions turn golden.

Add dried fenugreek leaves and all the spices. Sauté for 30 seconds, then add tomatoes. Cook, stirring, until the oil separates from the tomatoes. Add the cooked lentils. If the dal is too thick, add a little water. Cook for 2 minutes, then add cilantro and turn off the heat.

Transfer the dal to a serving bowl and top with heavy cream before serving.
