Making the most of leftover tortillas to prepare these chips, perfect for chilaquiles, refried beans, or a variety of other recipes.

Cut the tortillas into your desired shape, depending on how you plan to use them.

Heat enough oil in a pot over medium heat. Fry the tortilla pieces in batches so they cook evenly and turn golden brown.

Remove the chips and let them drain on a paper towel-lined plate to absorb excess oil. Now they're ready to use in your favorite recipe. I recently made some to serve with Sonoran-style corn soup.
