Sindhi cuisine is so versatile, so today I am sharing with you all bhuga chawal as it is called basically its rice cooked in caramelized onions, hence the red/brown color😊
Steps

Wash and keep rice aside.

Slice the onions finely, you can chop also.

In deep bottom pan heat oil put half red chilli powder and bay leaf, once its starts getting warm, put onions and let them caramelize, avoid adding salt as it will make onion sweat and they will not turn brown.

Once onion is reddish, add water add salt, remaining red chilli powder, bring water to boil. Color of the water should be like in the image below

Now add rice and cook on high flame till very little water remains

Low the flame and cover and cook till done.

Serve with your favourite curry or fried potatoes, this rice can be paired with anything or can be eaten with papad and curd or achar😋
